From the Kitchen

Don't you just love your crock pot?  It does all the hard work while I check Facebook.   I need to use mine more often.  So how about I do it!  How about when I come across a good and easy recipe I share it with ya'll?  I'm not just throwing around the word easy here.  It's so frustrating for me to search for a "simple" recipe only to discover that it includes ingredients I have never before purchased  and instructions that use words I have never before heard.  If I tell you it is easy I pinky swear it will be easy.

How about this easy one for starters.

Toss in some frozen chicken breasts or chicken tenders into the pot.  Sprinkle with taco seasoning.  I always have the packages of seasoning on hand in my pantry.  Pour some salsa of your liking on top.  If you are using THRIVE black beans then add them now.  If you plan on using a can of black beans add them at the end otherwise they get too mushy.  I also throw in some THRIVE corn toward the end.  I cook for about 3 hours on high.  Shred the chicken and VIOLA!  Stuff the mixture in a tortilla and top it with some gauc and sour cream.  You could throw in some Spanish rice if you really wanted to get fancy.  
See, I told you it was easy.  

Oh, p.s.
I've noticed not all crock pots cook at the same speed.  I had one "slow" cooker that forced me to reduce cooking times on everything or risk a charred pot of crap.
